This is sooo good! This is what I did when I doubled the recipe and did not add the mushrooms. I cut chicken into strips, season it, and saute them with 3 cloves of garlic (I used a lid to soften the chicken) . For the white sauce mixture, I added about a cup of white wine,, fresh spinach, and 4 cloves of crushed garlic, and added a pinch of salt to taste, then followed the recipe as is. I then poured it over al dente spiral noodles in a deep dish casserole, mixed in 2 cups of mozarella covered with foil, and baked for about 30 to 40 mins. Awesome!

Fabulous recipe! Received rave reviews from my family and a friend dining with us. Modifications I made...Used a little more half-and-half for a thinner sauce and simmered bone-in chicken breasts, then removed from bone and shredded. Used as a layer between layers of sauce. Also plan to cut down on garlic slightly next time. Wonderful recipe Bryan0320! Thanks for sharing.

Just made this for dinner tonight and my husband and I loved it. I cut the chicken into bite size pieces and sauteed them in a little olive oil and minced garlic until cooked thru. Removed the chicken and wilted some fresh spinach in the chicken juice that was left in the pan. Removed and squeezed dry. I did not use butter or lemon juice. Just mixed together mushroom soup, fat free half and half, parmesan and 1 tsp of Italian seasoning. Stirred chicken and spinach into the soup mixture, poured into a pie plate and just sprinkled a little additional parmesan cheese on top. Served over angel hair spaghetti. The sauce is wonderful! To cut way down on the fat in this recipe, I omitted the butter, bacon bits and mozzarella cheese and used fat free half and half and it still tasted delicious.
