If you are looking for an easy weeknight meal, try these stuffed chicken meatballs with mozzarella cheese and French onion flavors.
Made this for my meatball hating family last week because I thought it looked great- they were asking me to make it again before the meal was over! Made it just as it's written, don't think I would change anything (except make lots more sauce!). The mozzarella stuffing is a neat touch, but it would have been just as good to top with shredded mozz. Don't overwork the meatballs and you'll have a great and surprisingly quick and easy meal that everyone will love.
We really enjoyed the recipe. I did make a mistake and add the onion to the meatballs because I was blabbing on the phone, But that worked out all right. Other than that I did the recipe as they said. I added more of the breadcrumbs and I substituted stuffing mix because I didn’t have any breadcrumbs. I did more of the flour because I desired the sauce to be thicker. It’s very unusual I give it a thumbs up!
