I made this for dinner last night and I am a hero in the kitchen. I had about one and 3/4 cups of the Orecchiette pasta so I used it all and two spicy Italian sausages. I had some mushrooms which need to be used so I quartered them and added them while cooking the onions. I squeezed the juice from half a lemon after the sausage and pasta were added to the pan with the cup and a half of the broth. A few grindings of fresh pepper the rest of the broth (one whole box 900ml low sodium chicken broth) and finally the arugula. I probably used about 1 cup chopped. Then a few spoonfuls of very good parmesan cheese. This was a very easy and very delicious dinner. This is going into my "Tried and True" file. My additions/changes were insignificant to the recipe and did not alter the intended flavour.
